Couture Cakers International Sugar Art Collaboration is hosted by Heba M Elalfy of Sweet Dreams by Heba.  This is the fourth annual celebration of couture using all types of sugar medium as created by an international team of Sugar Artists. The theme this year is Islamic / Hijabi Bridal Dresses.

For the next few days I will be interviewing sugar artists who are participating in the collaboration.  

Here is my interview with Fazliya Rameez.

Tell me about yourself. How long have you been decorating? How did you learn to decorate? Do you decorate professionally? Have you taught any cake decorating classes? Have you competed in any competitions?

I’m Fazliya Rameez. I’m conducting class for women’s and girls and also running an institute named Talent Hub Academy, based in Colombo. I’ve learned cake decorating since I was 12 years old. Eventually, I developed my skills and became a professional cake decorator.
I’ve participated in so many competitions and collaborations. I just wanted to update and improve my skills, so I decided to participate in collaborations.

I am specialized in Cake Decoration, cooking and also patisserie, but when it comes to most the specialized subject, I would like to say a variety of cakes.

Tell me about your design.  

I have never learnt sculpting properly. I just got the basic idea from Ms. Chamari Daniel. I was curious to participate in sculpting collaborations and competitions. Then I found your Couture Cakers Collaboration 2020 hosted by Heba. I desperately wanted to participate even if I didn’t have a proper knowledge about it. I put all my efforts in this collaboration because I found this very innovative and interesting.
I thought to try face in modelling chocolate. But unfortunately, in this lockdown & pandemic situation I can’t found proper ingredients. So, I done my best with ingredients what I have.
I made this face and all of it with homemade fondant and I used different mediums for decorating the gown such as edible fabric, sugar lace, wafer paper flowers etc. My structure was 3.5 feet in height.

Favorite stories about your pieces. 

I was decorating cakes since I was a small kid. When someone’s birthday was around the corner, I did my best to surprise them with a cake. My parents gave me the freedom to do that. 
I’ve finished my o/ls and I joined Prima Baking School. For the final exam, the teacher requested that we make 150 roses, 500 leaves and 150 buds. It was so challenging for us because we have completed only the certificate course in cake decorating. Since I was an obedient student, I followed each rule. And on the competition day, I had A VAN FULL OF FLOWERS…. haha. I can’t forget that day and moment. No one had brought that many flowers. My teacher, Ms. Kumuduni Dias, still remembers that and also stays in touch with me. 
I was dreaming about making a life size cake, but I didn’t get a chance. Then Ms. Reema Siraj hosted a cake convention here in Sri Lanka. I didn’t think twice; I participated because it was my long-term dream. The theme was “Nilame-Srilankan Culture”; “Never stop learning because life never stops teaching”. Yes ofcourse, in my case as a teacher, I wanted to update my skills and knowledge every year. So, I’m learning new techniques and for sure I will continue to improve.

Tell me about yourself. How long have you been decorating? How did you learn to decorate? Do you decorate professionally? Have you taught any cake decorating classes? Have you competed in any competitions?

I have been decorating cakes for more than 35years. I am a nutritionist dietician and had a semester of baking in college. I guess you can say i am in the wrong field. So after college i did a few more baking courses and cake decoration in Manila Philippines where i was born and where i grew up. I also teach one on one class on basic Sugarcraft. I also won the first prize in the dream cream contest organised by rich cream in 2002.
 

What is the name of your business/bakery, where you are located, what area you serve, and what you specialize in.

I run my business from home by the name of sheila?s  cakes. I specialise in children?s theme cake.

Tell me about your design.  

The design i Choose has lots of colour and i loved the skirt design. I had a patchwork and bas relief which i had been dying to do. The Islamic design was a good choice as i didn?t know that the designs on their wedding dresses had so much colours and palettes. I used a lace mould for the bodice and mould to make the lace designs.

Favorite stories about your pieces. 

I had a good practice by gifting cakes to friends and relatives. And my first two tier cake was for my baby sister when she turned 16. I was just a beginner then but i still remember the cake so clearly as if it was just yesterday. The first wedding cake i did was for my brother?s wedding here in mumbai. People were surprised to see such a cake as wedding cakes were not common during those time. The cake literally got over in 10 minutes. I wished i had made a bigger cake then. But i was just a beginner. 
 

If one of the famous cake decorators offered to make you your dream cake, what would you ask for?

If a cake decorator offered to make a cake for me it would be Carla puig. I just love her bust cakes. 

What is your favorite Pop Culture Famdom?  

I love Disney films and Hanna-barbers cartoons. I love Harry Potter series too. One of my favourite films is The Sound of music. That was the first movie i had seen when i just 6. My dream is to go to Disneyland one day. I love mickey and Minnie Mouse. I also love Donald and daisy . In fact i love al the cartoon characters of disney. I enjoy making Disney theme cakes too. Tom and Jerry was my favourite comic book characters . I used to save my allowance and splurge on comic books every month.
I will be making cakes till i can . There is no retirement from this. I hope i can do cake decorating till i am 70.

Tell me about yourself. How long have you been decorating? How did you learn to decorate? Do you decorate professionally? Have you taught any cake decorating classes? Have you competed in any competitions?

It has been quite a journey, and one that’s given me a lot of satisfaction. It is so heartening to create something that not only fits the vision of the client but goes above and beyond their imagination. I love to see their faces light up with exclamations like ‘wow’, ‘amazing’, ‘oooh’, etc. 
Back when I was a student at the Catering Institute in Mumbai, which is almost 40 plus years ago, I had no idea what I was going to do. All I knew was that I liked to bake and wanted to learn to decorate cakes the old-fashioned, simple way, like use the piping bag to make flowers, different designs with different nozzles, etc. I had no plans on a career or any such thing.
This is all due to God’s blessings and some confluence of events that propelled me into the space of cake designing and decoration. When my oldest child was a toddler, I searched high and low for a good cake with a good design/decoration but was disappointed with the offerings. Soon thereafter, my sister-in-law asked me to bake a Barbie cake for her daughter. Looking back, this was the moment that led me on my journey into baking and decorating. I designed that Barbie cake after looking at images from magazines and memorizing the details and that cake became my milestone moment because it was exceptional and appreciated by everyone who saw it and more by those who savored it. It set off a chain effect that led to me getting more and more orders. 
I aligned myself with a group of parents that sent their kids to an elite educational institution and this was my launching pad. The parents, the school authorities, the teachers, all made a beeline to my door placing orders that were outrageous and daunting but somehow through my sheer hard work and determination, I delivered. This was the pre-internet, pre-social media days, which meant that I had to scrounge through old American/European magazines and look intently at cake designs to memorize them. I would then go home and sketch the design and create the cakes. I had never heard of fondant, but taught myself the technique after studying it through books at the American and British library.

Tell me about your design.  

For Couture Cakers International,we were asked to create cakes that resembled a gorgeous dress of a bride who wears a hijab. I was greatly inspired by a dress posted by Radden Anissa brides on Instagram.

Its intricate lace designs with sequence stone work and diamonds led me to create the cake. The tiara topper is made of gum paste and the hijab is depicted in folds of fondant with a silver and blue border. The middle tier represents the bodice of the dress where the sequence is made of wafer paper and individually made fondant diamonds represent the gorgeous neckline. The lower tier is depicted with Bas relief flowers and leaves, edible lace scrolls along with silver drags to complete the look. Extruded fondant forms the goose feather frills of the dress.

Favorite stories about your pieces. 

All my cakes are my precious creations but there are some that are very special. One was a cake that was designed for a client who was very evasive with his specifications and who would not reveal the intent of the cake. After beating myself against the wall literally, I came up with a design that fit the specs almost to the T. Well, when the client saw the cake, he requested some additions like chocolate trimmings around the cake. Not knowing how to satisfy the client’s request, I quickly grabbed some chocolate drippings left over from the chocolates I used to make, and gently lined the cake with them. A few days later as I was watching some TV, I jumped up when I saw my cake in an advertisement of Aircel – pay per second. It was all over the media, on TV, in the magazines, even on billboards. That was a special moment for me.

At this point, I was now plugged into the performing artists forum. Movie stars, TV personalities, musicians, chefs, placed their requests for unique and stylish cakes. I keep learning all along and always try to better myself each time. With modern technology like Pinterest, Instagram, google, etc. I look up designs and take pictures on my phone to help me create cakes with almost picture perfect recreations.
Also, I have now started designing cakes for weddings and other related functions. These days there are many accompanying events that are associated with a wedding. I spend time with the bride and groom, understand their viewpoint, get their color schemes, and design cakes that blend with all of that. It is a tough but very satisfying process.

Who is your favorite Star Wars character? Which Star Wars movie is your favorite? Do you have a favorite Star Wars TV show or book? If you were living in the Star Wars universe – what would you want to be Jedi, Sith, Rebel, Imperial, Resistance, Smuggler, Bounty Hunter…?

I was asked to make a Star Wars theme cake not knowing the real client. I studied the characters intently and created a perfect scene with all the major characters like Darth Vader, Yoda, etc. when I was asked to deliver the cake, I realized it was none other than Madhuri Dixit who had ordered the cake for her sons’ birthdays!!

Do you have a favorite Disney movie? Do you have a favorite Disney character? What is your favorite thing to watch on Disney+? Have you been to any of the Disney parks? Do you have a favorite ride? Do you have a favorite story about a trip or experience at one of the Disney parks?

I love doing Disney themed cakes and the Disney characters are my favorites. I love Cinderella, Sleeping Beauty, Snow White, Arial, Aurora, all of them.

Tell me about yourself. How long have you been decorating? How did you learn to decorate? Do you decorate professionally? Have you taught any cake decorating classes? Have you competed in any competitions?

My name is Andrea Aldiry and I’m from Slovakia . My cakes are my hobbies. I started baking when my children were small around 6 years ago. I saw a program on TV about professional cakes and cake decorators and it excited me so much that I wanted to try it.
And I’m trying till now.. I learned from  YouTube videos mainly. Everything I saw, I wanted to try. Slowly , I dared to bake not only for family but also for friends.
I’m happy with what I already know and at the same time, I like to remember my hard and fun beginnings. My first ” covered “cake was covered by my husband because I didn’t dare to do it and he had more experience with baking than me 🙂 Not with decorating, just baking . So we spread the fondant for about half a millimeter..You can imagine what it  looked like, mainly on the side of the cake . I put chocolate pieces on the side of the cake and on the top some sugar animals from the shop. Pink ribbon around and voilà  , the cake was ready , masterpiece :)) At least that’s how I felt when I finished it . I don’t know if I mentioned that the cake was from muffin’s dough because it was the only one dough I knew to bake. The cake was for my little niece . At the celebration of her birthday, we all ate it happily 🙂
So I learned from videos, my husband and family supported me and enjoyed my progress. Only last year I attended a sugar doll course with very talented Denis Zuev. It was a very important and useful experience  for me. I haven’t participated in any competition yet.

Tell me about your design. 

My cake inspired by islamic wedding dress
I was very pleased and honored when I was invited by Heba Elalfy to collaboration Couture Cakers International and very pleased with the theme of Islamic wedding dresses with hijab becouse it’s very close to me.

I chose wedding dress in a shade of cream or little beige color with lace and floral pattern,  with crystal crown on the bride’s head .They enchanted me by their gentleness and elegance and shade. It’s one of my favorite colors.
I tried to make my cake elegant and noble as the dress is.The lower tier is styled like a voluminous skirt of wedding dress with a hand painted pattern of flowers and petals.
Edible lace dominate on the second tier which is folded and airy. The flowers on it are carved from wafer paper framed by royal icing with little sugar pearls in the middle. The highest tier is similar.  On the top is crown made from isomalt ,which is decorated by edible lace ,sugar pearls  and some details of fondant..

Who is your favorite Harry Potter character? If you went to Hogwarts, which house would you want to be sorted into? Which house would you actual be sorted into? If you were a teacher at Hogwarts, what class would you want to teach? What would your Patronus be?

I like Harry Potter films . My favourite character is Harry and Hermione , off course . I love that fantasy world with magics and unreal characters. I think we all go back to childhood when we watch it . I made one cake last year at this theme  ,there was hand painted Harry and map of Hogwarts with modeled  golden snitch on the top . And old looking envelope with seal. On sides of the cake was written inscription of magic spells .. I enjoyed the cake  very much .

About superheroes.. When I was small I watched  a Superman but when I became a woman I found one real and  got married to him 🙂
